Baked Fajita Chicken

Easy, one pan Chicken Fajita bake topped with cheesy goodness makes a delicious and healthy meal prep or quick dinner.

I baked my chicken on two separate sheets since my oven is tiny.


Makes: 4 servings                 Prep time: 10 minutes

Bake time: 25 minutes                Total time: 35 minutes

INGREDIENTS

  • 1/2 green bell pepper
  • 1/2 yellow bell pepper
  • 1/2 orange bell pepper
  • 1/2 red bell pepper
  • 1/2 yellow onion
  • 1 teaspoons paprika
  • 1 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1/2 teaspoon salt
  • 4 tablespoons olive oil
  • 1/4 cup lime juice
  • 4 chicken breasts
  • 1/2 cup pepper jack cheese

Step 1: Preheat oven to 400 degrees. Slice peppers and onions julienne style into strips

Step 2: in a small bowl, mix together paprika, cumin, oregano, cayenne pepper, onion powder, garlic powder and salt

Step 3: Coat chicken breasts in 2 tablespoons of olive oil and 2 tablespoons of lime juice and rub seasoning on both sides of each piece of chicken

Step 4: Place chicken on a foil lined baking sheet and cover the rest of the pan with onions and peppers.

Step 5: Drizzle the remaining olive oil and lime juice over the pan and top with salt and pepper

Step 6: Bake for 25 minutes, then remove and sprinkle each chicken breast with cheese. Place back in the oven for an additional 5 minutes.
