Avocado Caprese Salad
Super quick and delicious, adding avocado to this classic Italian dish gives a nutritious boost and makes a festive side dish around the holiday.
Makes: 2 servings Prep time: 5 minutes
INGREDIENTS
- 3/4 cup cherry tomatoes, chopped in half
- 3/4 cup bocconcini, chopped in half
- 1 avocado, cubed
- 2 tablespoons olive oil
- 2 teaspoons salt
- 3 basil leaves, chopped
Step 1: Mix all ingredients in a bowl until evenly coated with oil and salt. Add more salt to taste if necessary. Top with chopped basil.
Step 2: Serve immediately. If you are not eating right away, I'd suggest coating the avocado in lime juice before adding to the salad. This will prevent it from turning brown.
