Apple Cider Doughnuts
Just plain delicious doughnuts with a fluffy texture that have a real apple cider flavor.
Makes: 14 doughnuts Total Time: 40 minutes
INGREDIENTS
Doughnuts
3 cups apple cider
1 large egg
1/3 cup sugar
1/3 cup light brown sugar
3 tbsp melted butter, unsalted
1 3/4 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon powder
1/4 tsp cardamom powder
1/4 tsp all-spice powder
Spiced sugar topping
1 1/4 cup sugar
1 tsp cinnamon powder
1/2 tsp cardamom powder
1/2 tsp all-spice powder
1/3 cup melted butter, unsalted
INSTRUCTIONS
Preheat the oven to 350 degrees and grease three regular doughnut pans (they should make 6 each). If you only have one, just do one and you’ll have to bake the doughnuts in three batches.
Place the apple cider in a small pot over low-medium heat with the lid on and set the timer for 5 minutes. Continue checking and stirring the apple cider every 5 minutes until it’s reduced to 1/3 cup and is thickened into a syrup. Set aside.
Whisk together the egg, sugar, brown sugar and melted butter in a medium bowl.
In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, cardamon and all-spice.
Add the dry ingredients into the wet ingredients along with the reduced apple cider and mix until just combined. Do not overmix or the doughnuts will lose their fluffy texture.
Pipe the batter into the doughnut pans, filling each doughnut half full and bake for 10 minutes until a tooth pick inserted comes out clean.
Let the doughnuts cool in the pan for three minutes, before removing and placing on a cooling rack.
While the doughnuts are cooling mix together the sugar coating. Whisk together the sugar and spices in a shallow bowl.
Once doughnuts are cooled, one-by-one, brush them with the melted butter and coat with the sugar mixture.
Enjoy the doughnuts fresh, or place in an airtight container for up to one week.
