Peppermint Oreo Truffles
INGREDIENTS
2 packages of peppermint Oreos (or regular Oreos + 1 teaspoon peppermint extract)
1 package of cream cheese, room temperature
2 cups of melting chocolate
1/4 cup crushed peppermints
Step 1: In a food processor, crush the Oreos until finely ground.
Step 2: Pour the crushed Oreos into a large mixing bowl and add in the cream cheese. Mix with a wooden spoon or hand mixer until evenly combined.
Step 3: Place the mixture into the freezer for 20 minutes until solid enough to form balls. Form into 1” diameter balls and place on a parchment paper lined tray. Freeze for 30 minutes until solid.
Step 4: Melt chocolate 30 seconds at a time in the microwave (or use a double boiler) until smooth. Coat the truffles one at a time and place back on the tray. Immediately sprinkle with crushed peppermint for decoration.
To get two-toned truffles, dip half of each truffle in white chocolate and place back in the freezer until hardened. Remove and dip the other half in a colored chocolate and then sprinkle with crushed peppermint.
