Apple Pie Stuffed Baked Apples

I love apple pie, but living alone baking an ENTIRE apple pie for one person is just a recipe for disaster, so I’ve started to bake apple pie stuffed apples! I can easily cut the recipe down to one, or make a few and reheat. They’re super simple to eat and have the bonus of the being quite adorable if I do say so myself.

Makes: 4 apples Total Time: 25 minutes

INGREDIENTS

  • Crumble

  • 1/4 cup all purpose flour

  • 2/3 cup old fashioned oats

  • 1/3 cup light brown sugar

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon cloves

  • 1/2 teaspoon nutmeg

  • 1/2 teaspoon ginger

  • 1/4 teaspoon salt

  • 3 tablespoons butter, cold and cubed

  • Filling

  • 6 apples (I used gala apples)

  • 1/2 teaspoon cinnamon

  • 1/4 cup brown sugar

  • 2 tablespoons unsalted butter melted

  • Vanilla ice cream and caramel sauce for serving (homemade caramel recipe here)

Step 1: Preheat the oven at 400 degrees. Slice off the top of four apples and use a melon baller to core the inside. Peel and dice the remaining two apples.

Step 2: In a small saucepan, sauté the diced apples, cinnamon, brown sugar and butter for 8-10 minutes until apples are soft and easily pierced with a fork. Remove from heat and scoop into the cored apples

Step 3: Using a fork, mix together the flour, oats, sugar, spices and salt. Cut the butter into the mixture until crumbly

Step 4: Sprinkle 1 tablespoon of crumble on top of each apple.

Step 5: Place the apples on a foil lined baking sheet and bake for 12-15 minutes until the crumble on top turns light brown and crispy.

Step 6: Scoop a small ball of vanilla ice cream on each apple and drizzle with caramel sauce. Best served warm.
