Pink Velvet Cheesecake Stuffed Waffles
This recipe is perfect for one person for a fun (and colorful) breakfast or brunch. I felt like treating myself this morning, for no particular reason other than I did my grocery shopping and laundry so I felt like I needed to reward myself for being so good at adulting.
Makes: 2 waffles Total time: 15 minutes
INGREDIENTS
Waffles
1 cup white flour
2 teaspoons baking powder
2 tablespoons white sugar
Pinch of salt
1/4 cup butter, melted
3/4 cup + 2 tablespoons buttermilk
1 teaspoon vanilla
1 egg
1/4 teaspoon pink food coloring
Cheesecake filling
4 oz cream cheese
2 tablespoons sugar
1 tablespoon heavy cream
Toppings
Whipped cream
Chocolate syrup
Strawberries, diced
Sprinkes
Step 1: In a medium mixing bowl whisk together flour, baking powder, sugar and salt. Set aside.
Step 2: In a different bowl, whisk together melted butter, buttermilk, vanilla, egg and pink food coloring.
Step 3: Mix together the wet and dry ingredients until just combined.
Step 4: Cook the waffles using a waffle iron or waffle maker and place on cooling rack once cooked.
Step 5: While the waffles are cooling, beat together the cream cheese, sugar and heavy cream for the cheesecake filling.
Step 6: Spread the cheesecake filling in between the two waffles and top with whipped cream, chocolate syrup, strawberries and sprinkles. Enjoy immediately!
