Pink Birthday Cake Cookies
These are my congratulations on signing the lease on your first studio apartment in NYC cookies that I made myself this past weekend and then ate on Monday after signing my lease! You can use colorful sprinkles, but given my apartment will essentially be a millennial barbie dream house, I figured pink was appropriate. These cookies aren’t crunchy or necessarily chewy like others, they have more of a soft and almost cakey texture to them while still being super moist.
Makes: 24 large cookies Total time: 20 minutes
INGREDIENTS
1 cup butter, room temperature
1 cup light brown sugar, packed
2 eggs, room temperature
1 teaspoon vanilla extract
2 teaspoons baking soda
1 teaspoon salt
3 cups flour
1/2 cup sprinkles
3/4 cup white chocolate chips
3/4 cup chocolate chunks
Step 1: Preheat the oven to 375 degrees. Using a standing mixer or hand mixer, beat the butter and sugar until fluffy and light.
Step 2: While mixing slowly add in the eggs and vanilla.
Step 3: Sift together the baking soda, salt and flour and then add into the batter.
Step 4: Once completely combined, add in the sprinkles and chocolate chips until evenly distributed.
Step 5: Scoop dough onto a prepared baking sheet (I use a silicone baking mat) ina 2 inch in diameter balls.
Step 6: Bake for 8-9 minutes, until they JUST start getting slightly golden brown on top. If they look almost undercooked in the middle that’s fine. They’ll continue to cook a little and once they are cooled they will remain nice and soft.
Step 7: Remove from the oven and place on baking racks to cool.
