Double Fudge Brownies

My work wife is so simple and easy all she wants for her birthday is brownies plain and simple. So here is the plain and simple recipe I use to make them! I add the chocolate chips in second to last and then add in the freshly brewed coffee to melt the chips a little so when they get mixed in it makes the brownies even more gooey.

Makes: 9x13 pan (THICK)               Total time: 50 minutes

INGREDIENTS

  • 1 1/2 cup (3 sticks) butter
  • 3 1/2 cup sugar
  • 6 large eggs
  • 1 3/4 cup + 2 tbsp cocoa powder
  • 1 teaspoon salt
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon vanilla
  • 2 1/4 cup flour
  • 1 1/2 cup milk chocolate chips
  • 1 1/2 cup semi-sweet chocolate chips
  • 1 1/2 tablespoon strong brewed coffee, hot

Step 1: Preheat the oven to 350 degrees and butter a 9x13 inch baking dish.

Step 2: In a medium saucepan, melt butter completely and stir in sugar, stirring constantly until dissolved. Do not let it come to a boil.

Step 3: Remove from heat and pour into large mixing bowl, beating together with eggs, cocoa powder, salt, baking powder and vanilla.

Step 4: Mix in flour until just combined and then fold in 2 cups of chocolate chips (1 cup of each).

Step 5: Pour in the freshly brewed coffee (should be hot) and quickly mix it in completely.

Step 6: Pour batter into the prepared pan and top with remaining chocolate chips, pressing them down lightly.

Step 7: Bake for 35-40 minutes until toothpick inserted comes out clean and then place pan in the fridge until cool to the touch.

Step 8: Remove brownies from pan and serve immediately while still warm or keep in an airtight container for up to a week.
