Chocolate Peanut Butter No Bake Cookies

Soft and chewy with a rich peanut butter and chocolate taste, these cookies are easy to make and don't even need an oven!

Chocolate Peanut Butter No-Bake Cookies may be one of my favorite cookies ever. Easy to make and no need to turn on the oven, so in the summer in my small 5th floor walk-up in Manhattan with no AC, they are the perfect treat. 

If you want thicker cookies, let the batter sit for 2 minutes before scooping onto trays to let cool. This will allow it time to thicken so it doesn't spread as much.

Makes: 36 cookies       Prep time: 15 minutes     Cool time: 2 hours     Total time: 2 hours 15 minutes

INGREDIENTS

  • 1/2 cup milk
  • 2 cups sugar
  • 1/2 cup butter
  • 4 tablespoons cocoa powder
  • 1 cup peanut butter
  • 1 tablespoons vanilla extract
  • 3 cups oatmeal

Step 1: In a large pot, mix together milk, sugar, butter and cocoa powder until boiling.

Step 2: Let boil for 1 minute, then remove from heat and add in peanut butter and vanilla, stirring until smooth.

Step 3: Add in oats, one cup at a time, until evenly combined.

Step 4: Drop spoonfuls of batter onto cookie sheets lined with parchment or wax paper and let cool at room temperature for up to two hours, until solid and no longer shiny.
