Cookie Dough Fudge Brownies

It's basically all of my favorite desserts rolled into one! I'm a big believer in raw cookie dough and chocolate, so this three layer bar starting with fudgey brownies with chocolate chips, topped with a layer of thick chocolate ganache fudge with gooey edible cookie dough in the middle is heaven. And extremely addicting. When I made this batch for work, about 8 of them couldn't fit into the boxes I had so I left them at home and I kid you not, I ate them in two days. This is why I have to bake for other people. Leave it in my kitchen and they'll disappear quickly and find their ways to my thighs :)

Makes: 9x13 pan          Prep time: 45 minutes          Total time: 2.5 hours

Brownies

  • 3/4 cup + 1 tablespoon cocoa powder
  • 1/2 teaspoon baking soda
  • 2/3 cup butter, melted
  • 1/2 cup boiling water
  • 2 cup sugar
  • 2 large eggs
  • 3/4 teaspoons vanilla
  • 1/4 teaspoons salt
  • 1 1/3 cup flour
  • 1 bag of chocolate chips

Step 1: Preheat the oven to 350 degrees and line a 9/13 pan with oil and butter.

Step 2: In a large mixing bowl, whisk together the cocoa powder, baking soda and 1/3 cup of the melted butter until thick.

Step 3: Add the water and whisk until thick and smooth. (PSA: it will start to bubble and rise before it gets smooth and thick because of the combination of the baking soda and water. This is normal and necessary.)

Step 4: Add the remaining butter, sugar, eggs, vanilla and salt. Once combined, add in the flour and chocolate chips at the same time, stirring until everything is smooth.

Step 5: Pour batter into the prepared pan and bake for 35 minutes. Remove from oven and place in the fridge to cool. While brownies are cooling, prepare the cookie dough and fudge.

Cookie Dough

  • 1 1/3 cup butter
  • 2/3 cup sugar
  • 1 1/3 cup brown sugar
  • 1/2 cup milk
  • 3 teaspoons vanilla
  • 1/4 teaspoon salt
  • 1/4 teaspoons cinnamon
  • 2 1/2 cups flour
  • 1 bag mini chocolate chips

Step 1: In a medium mixing bowl, beat the butter and sugars until smooth and light in color with an electric mixer or a standing mixer.

Step 2: Add in the milk, vanilla, salt and cinnamon and stir until combined. Slowly add in the flour 1/2 cup a time, until the dough becomes fluffy.

Step 3: Stir in the chocolate chips. Spread cookie dough evenly over the brownies once fully cooled.

Chocolate Fudge Topping

  • 1 cup heavy cream
  • 4 cups chocolate chips

Step 1: Over medium heat, bring the heavy cream to a boil. 

Step 2: Add in the chocolate chips and remove from heat, stirring until smooth and all chips have melted.

Step 3: Pour fudge over the cookie dough and place the bars back in the fridge for at least 2 hours until everything has set. Cut and serve or store in an airtight continer for up to 1 week.
