Spinach & Turkey Bacon Quiche
Quiche is one of those recipes that my parents made all the time growing up, so it's always been one of my favorite meals. It's easy to make and you can fill it with whatever you have around for veggies, protein and cheese. One of my favorite combinations is turkey bacon and spinach. My actual favorite is the lobster one my mom makes, but I can't afford lobster in NYC so this is as good as I can do.
Makes: 1 9" quiche Total time: 1 hour 30 minutes
INGREDIENTS
- Crust
- 1 1/2 cup butter, cold and cubed
- 3 1/2 cup flour
- 1/3 cup cold water
- 1 teaspoon salt
- Filling
- 7 eggs
- 1 cup skim milk
- 1 cup shredded cheddar cheese
- 9 oz. spinach, cooked down
- 1/2 cup turkey bacon, diced into 1 centimeter square
- 2 teaspoons salt
Step 1: Mix together the butter, flour and salt. Using a fork or pastry cutter, cut the butter into the flour until crumbly. Add in the water and mix until dough just comes together.
Step 2: Roll out the dough on a clean, floured surface until 1/4 inch thick, then place in a pie pan and set aside.
Step 3: Whisk together the eggs, milk and salt, set aside.
Step 4: Pour the shredded cheddar into the pie pan, making sure the pie crust is completely covered.
Step 5: Add in the spinach and turkey bacon on top of the cheese, spreading it around evenly.
Step 6: Pour the egg mixture into the pan. It should reach just about to the top of the pie crust. Place in oven and bake for one hour.
Step 7: Remove from oven and let cool for 20 minutes before serving.
