Oven-Baked Parmesan Truffle Fries

I hate mushrooms, not quite sure why. I have a memory of eating them once and loving them, but honestly can't remember if that's a dream or it actually happened. Either way, truffle oil is the closest I will come to mushrooms now. It helps that truffle oil is AMAZING on basically everything. My first memory of realizing why truffle oil was so expensive and special, was when Chuck offered Serena a grilled cheese with truffle oil in the first episode of Gossip Girl after she'd been drinking at the bar. Then I was like, okay, if it's good enough for Serena, I must cook with it.

Makes: 3 servings         Prep time: 15 minutes          Bake time: 45 minutes

INGREDIENTS

  • 3 potatoes

  • 1 tablespoon + 1 teaspoon white truffle oil

  • 1 teaspoon salt

  • 1/3 cup grated Parmesan cheese 

  • 1 tablespoon fresh parsley

Step 1: Preheat the oven to 450 degrees. Cut potatoes into long thin strips about 1 centimeter thick. 

Step 2: Toss potatoes with 1 teaspoon of white truffle oil and the salt and lay on a baking sheet, 1 layer deep.

Step 3: Bake the fries for 20 minutes. Remove from oven and flip over. Bake again for 25 minutes, then remove from the oven.

Step 4: Put the fries in a large bowl and toss with 1 tablespoon white truffle oil, Parmesan cheese and parsley until evenly coated.

Step 5: Enjoy fresh and warm for the best flavors.
