Smoked Cheddar Truffle Cauliflower Mac n' Cheese
This is my attempt at being really healthy and it has cauliflower in it so technically it is healthy. I have recently come to love cauliflower actually, I never liked it before, but it's actually so delcious and I'm very proud of my tastebuds for maturing finally.
Makes: 3 servings Total time: 20 minutes
INGREDIENTS
- 1 head of cauliflower florets
- 1 tablespoon flour
- 1 tablespoon butter
- 1/2 cup 1% milk
- 1/2 teaspoon salt
- Pinch of pepper
- 1 1/4 cup smoked cheddar cheese, grated
- 1 teaspoon white truffle oil
- 1 tablespoon chives, chopped
- 1/2 cup turkey bacon, chopped (optional)
Step 1: Steam cauliflower florets for 10-15 minutes, until you can easily pierce with a fork.
Step 2: While cauliflower is steaming, melt butter in a small pot and add flour for a rue.
Step 3: Slowly add in milk, 1 tablespoon at a time.
Step 4: Add in salt, pepper and truffle oil, whisk until smooth.
Step 5: Add in cheese and stir until melted and smooth.
Step 6: Pour the steamed cauliflower into the cheese sauce and stir until coated.
Step 7: If adding turkey bacon, chop into small pieces and cook in a small pan over medium for 5 minutes. Pour into mac and cheese with chives and stir until evenly distributed.
Step 8: Eat warm or store in airtight container in the fridge for up to a week.
