Citrus Honey Scallops with a Bacon Peppercorn Crumble

A quick, yet sophisticated dish that not only tastes delicious, but looks restaurant quality. Perfect to impress friends, family, first dates, or just yourself!


Servings: 5 scallops           Prep time: 30 minutes          Cook time: 3 minutes

INGREDIENTS

  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Juice from 1 lime
  • Pinch of salt and pepper
  • 1/2 slice of bacon*
  • 5 sea scallops
  • 1 teaspoon olive oil for cooking
  • Peppercorn, crushed
  • Lime zest

Step 1: In a medium sized bowl, whisk together olive oil, honey, lime juice, salt and pepper. 

Step 2: Add scallops to the marinade, cover and place in fridge for 25 minutes.

Step 3: After the scallops have been marinading for 20 minutes, in a pan over medium-high heat, cook the turkey bacon until crispy (I don't care if you don't like bacon crispy, it needs to be nice and crisp to get a good crumble). Remove from pan and place on a paper towel.

Step 4: Heat a pan over medium heat with the 1 teaspoon of olive oil until the oil starts to smoke.

Step 5: Remove scallops from the marinade and place onto the pan. Cook each side for 90 seconds getting a nice sear.

Step 6: Before serving, dip each scallop back into the marinade so the flavors are fresh. Crumble the bacon over each scallop, followed by some crushed peppercorn and lime zest. Serve immediately.

*I don't eat pork (pigs are too cute) so I used turkey bacon, but regular bacon is perfectly fine!
