Halloween Chicken Taco Stuffed Peppers
Makes: 5 peppers Prep time: 30 minutes Bake time: 25 minutes
INGREDIENTS
- 2 chicken breasts
- 5 orange peppers
- 1 cup corn
- 1 can black beans
- 1 can diced tomatoes
- 1/3 cup + 5 tablespoons shredded cheddar cheese
- 1 teaspoon salt
- 2 tablespoons taco mix
Step 1: Place chicken breasts in a pot with water and bring water to a boil. Let simmer for 20 minutes, then remove chicken from water and shred using two forks, placing shredded chicken in a bowl.
Step 2: Add the corn, black beans, diced tomatoes, 1/3 cup of the cheese, salt and taco mix to the chicken and mix until combined. Set aside.
Step 3: Cut off the tops of each pepper and remove the seeds inside. Using a thin, sharp pairing knife, cut jack-o-lantern faces into the fronts of the peppers if you are making them Halloween themed.
Step 4: Preheat the oven to 350 degrees. Fill each pepper with the chicken mixture and top each with one tablespoon of cheese.
Step 5: Bake for 25 minutes until the peppers soften and the cheese has melted. Remove from oven and serve immediately or place in airtight container in the fridge.
