Pumpkin Carbonara

Pumpkin can be added to basically every recipe and it makes it ten times better and perfect for fall (which is the best season ever). That’s all, enjoy!

Makes: 5 servings        Total time: 25 minutes        

INGREDIENTS

  • 12 oz spaghetti or linguine pasta

  • 3 eggs

  • 1 cup Parmesan cheese

  • 3/4 cup pumpkin puree

  • 1 tablespoon olive oil

  • 3 cloves garlic

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 3 tablespoons whole milk

  • 1 tablespoon chopped, fresh parsley

Step 1: In a large pot, cook pasta according to directions on the box. 

Step 2: While pasta is cooking, in a small bowl, whisk together eggs, pumpkin and parmasean cheese. Set aside.

Step 3: In a small saucepan, heat olive oil and add garlic, sautéing for 1-2 minutes until golden brown.

Step 4: Working efficiently, mix in the egg and cheese mixture into the drained pasta until coated. Add in the milk, salt, pepper, garlic and parsley.

Step 5: Serve and top with additional cheese and fresh parsley.
