Greek Yogurt Blueberry Muffins

I love carbs and breads, but also try and live a fairly healthy lifestyle which means finding healthy ways to still eat things like muffins for breakfast. That's where this recipe comes in! These muffins are made with greek yogurt, whole wheat flour, oats and honey as a sweetener instead of sugar!

Makes: 12 muffins                Total time: 45 minutes

INGREDIENTS

  • 1/2 cup all-purpose white flour
  • 1/2 cup whole wheat flour
  • 1 cup rolled oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup skim milk
  • 1/3 cup honey
  • 1 teaspoon vanilla
  • 1 cup 0% plain greek yogurt
  • 1 1/2 cup blueberries

Step 1: Mix together flours, oats, baking powder and salt and set aside.

Step 2: In a separate bowl, whisk together eggs, skim milk, honey, vanilla and greek yogurt.

Step 3: Pour wet ingredients into the dry ingredients and mix together.

Step 4: Toss blueberries in 1 tablespoon flour until coated, then fold into the batter.

Step 5: Scoop batter into lined muffin tins, filling each to the top.

Step 6: Bake for 20 minutes until they just start to turn golden brown, then remove from oven and place on cooling rack.
